  • 200g scallops (optional)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 courgette, sliced into rounds
  • 1 red onion, cut into chunks
  • Metal or soaked wooden skewers

For the Garlic Butter Marinade:

  • 4 tbsp melted butter
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp parsley, chopped
  • ½ tsp black pepper
  • ½ tsp sea salt

Instructions

  1. In a bowl, whisk together melted butter, garlic, lemon juice, parsley, salt, and pepper.
  2. In a separate bowl, toss the seafood with half the marinade. Cover and let it sit for 15-20 minutes.
  3. Thread fish, prawns, scallops, and vegetables onto skewers, alternating for even cooking.
  4. Heat the grill to 200°C (400°F) and lightly oil the grates.
  5. Place the kebabs on the grill and cook:
    1. Fish: 3-4 minutes per side
    2. Prawns & Scallops: 2-3 minutes per side
    3. Flip once for even charring.
  6. Brush with extra marinade at the last minute. Remove from the grill and let rest for 2 minutes before serving.
